Boil the potato until soft, let stand and cool. Mash with a fork. Stir in confectioners sugar gradually until mixture forms a dough. Roll dough out on powder sugared surface wax paper will do in a rectangular form. Spread peanut butter thinly over entire rectangle. Roll up the length. Slice into pieces. Store in air tight candy tin lined with wax paper at room temperature.
