Bob's Famous Christmas Potato Candy
Ingredients
1 smal size potato
(about the size of a large egg)
1 large bag confectioners sugar
peanut butter {Med size jar}
Directions
Boil the potato until soft, let stand and cool. Mash with a fork. Stir in confectioners sugar gradually until mixture forms a dough. Roll dough out on powder sugared surface wax paper will do in a rectangular form. Spread peanut butter thinly over entire rectangle. Roll up the length. Slice into pieces. Store in air tight candy tin lined with wax paper at room temperature.
This is a really old time recipe that my mom gave me many years ago.
It takes a little work but is a real treat around my house at Christmas
time.
